Roasted Beet Salad
This is an excellent summery salad. It is a very light and can be served as a side or appetizer salad. The cooking time in your oven may vary from mine as my oven doesn't seem to cook things very quickly.

this dish is very easy and fast to make. it is a simple fish dish served with asparagus, although green beans or spinach would be a nice substitute.

chocolate-butterscotch tofu pudding
I needed something to do with this tofu that has been in my fridge before it went bad. I had plans to make different dinners but it just wasn't calling out to me. So after perusing a zillion food sites, I found a few recipes for tofu pudding. I combined a few to come up with this recipe. I have to tell you I'm sure you are very skeptical right now thinking, "that sounds nasty", but I'll have you know its actually delicious and slightly healthier than regular pudding.

...is this thing on?
So for the past few months while I studied for the dreaded NBCOT exam and now am job-hunting, I have rediscovered cooking! This was all sparked by reading several books about organic and natural cookery and watching movies like FoodInc and King Corn. My entire way of cooking has shifted. I have been attempting to cook with more natural ingredients, organic produce, and nicely-treated, hormone-free meat. So I decided that instead of emailing a few set friends with recipes I have tried out that why not figure out how this whole thing called the internetS works and learn how to use a blog. I have now entered the 21st century! So feel free to follow my cooking disasters and adventures and drop me a post or two with suggestions.
