This pizza that I made for breakfast ended up being created
somewhat by accident. I was in a rush to throw something together and
left the pita in the toaster oven for too long so it got crunchy. But it
ended up being the perfect vessel. It is fast and delicious and while it may not be the most inventive dish, the combination of the sage with the cheese and eggs went together beautifully.
Serves 2.

Ingredients
1 plain rollup, cut in half
1 medium sized heirloom tomato
1 T fresh sage, chopped
2 T part-skim ricotta
1 oz fresh mozzarella, chopped
2 eggs
freshly grated sea salt and black pepper, to taste
Procedure:
1. Toast rollup in the toaster oven (and be sure to forget about it and leave it in there too long so it crisps up).
2. Heat a non-stick frying pan on medium and then cook the eggs sunny side up.
3. While the egg is heating, spread ricotta on the pita. Place tomato, sage, and mozzarella on top.
4. Place eggs on top of tomato/pita and sprinkle with salt/pepper to taste.
