Corn, Cucumber, Feta, Mint Salad

This is a Mediterranean style salad. I served it for dinner with grilled chicken on the side. It was a super light but filling dinner.

Serves 6 (1 cup servings)
ww = 3 points per serving.

2 1/2 ears uncooked corn, cut off the cob
1 pint of grape tomatoes, halved
1/2 cucumber, peeled, and cut into quarters and sliced
12 oil cured olives, pitted and minced
1 shallot, minced
1/2 cup mint leaves, packed, then minced
2 oz feta cheese, diced
juice 1 lime
freshly grated sea salt and black pepper

1. Prep all veggies.
2. Mix all ingredients in a bowl and add salt/pepper to taste.
3. Eat with happiness.
