Smoked Salmon Spread

This smoked salmon spread was served as part of a four course "mini" dinner. Marc and I had our friends Guez and Azul over. It sounds elaborate but really, I whipped up this meal in a snap. I served smoked salmon spread with cucumbers, cucumber avocado gazpacho soup (next post), swiss chard burgers with sweet potato fries, and then marc's new low-fat chocolate ice cream-- made with skim milk and xanthan gum! This recipe was inspired by the following site.

Serves 8. (serving size is 2 Tablespoons or 1/8 cup)
ww points = 1 point per serving
(This is not bad considering the entire 4 course meal was only 16 points!)

Ingredients:
3 oz smoked salmon (Wild Atlantic is best!)
1/2 c Tofutti Better Than Cream Cheese (or reduced fat cream cheese)
2 T fat free Greek yogurt
1 T lemon juice, freshly squeezed (or more to taste)
dash black pepper
1 t dried dill (plus a bit more for garnish)
1 cucumber or crackers (for serving)

Directions:
Puree all ingredients in a food processor until smooth. Place spread in a ziplock bag, cut the corner off, and pipette over crackers or fresh cucumber slices. Garnish with dill if desired.
