I woke up craving something salty. It was bad news bears. I debated on having anchovies on my toast because they were staring me in the face when i opened my refrigerator. I decided against it and then on second thought, just went for it. This is great if you are open to having an adventurous breakfast. It could also be served cut into fours for an appetizer. It is a super simple toast consisting of a soft boiled egg, anchovies, capers, and thinly sliced onion. If you have it on hand some fresh parsley would be a nice addition as well.
Serves 1.

Ingredients:
1 slice bread, toasted
2 anchovie filets, sliced into 1 cm pieces (preserved in oil or water--the fresher the better)
~ 1 T vidalia (or purple) onion, sliced as thin as possible
1 t capers
1 egg
freshly grated sea salt and black pepper
Directions:
1. To soft boil an egg: Fill a small pot of water about 1 egg's height higher than the egg itself. Bring it to a boil. When the water is boiling, slowly lower the egg (with a spoon) into the water. Continue to boil the water for 2 minutes, uncovered. Then roll egg over in the pan. Boil for another 3 minutes. Remove from heat immediately and run under cold water until cool to touch.
2. Arrange anchovies, onions, and capers on the toast.
3. Peel egg. Place whole egg in center of toast and gently cut into 4-5 slices. Finish with salt/pepper.
Yum. Salty breakfast or snack!
